EM is where AI struggles most Environmental monitoring is probably one of the hardest things to “automate” correctly. Because swab locations are not random. Experienced food safety teams choose them based on what they’ve seen over time. Moisture buildup. Traffic patterns. Equipment design. Places people don’t clean as well as they think they do. That’s the part AI struggles with. A system can generate a complete-looking EM plan. But it may completely miss the actual risk areas. And in many plants, contamination starts in the places that don’t look obvious at first. That’s why environmental monitoring is more than placing swabs on a map.
